Happy Shrimp! June 9, 2009

No, not happy FEET!  I said shrimp.  SHRIMP.  Happy, happy shrimp.  😀


And what, you ask, makes these shrimp so happy?  Well, I’ll tell you.  😀

It’s tequila.  😆

Not just tequila, of course.  😯

We marinated about a pound of shrimp that we dug out of the freezer in a margarita-type mixture:


1/2 cup tequila
1/4 cup lime juice
1/4 cup frozen OJ concentrate
2 tsp. vegetable oil

And that’s it.

I keep a can of Minute Maid in the freezer (transferred to a pint freezer container) – it comes in very handy for marinades – it adds a sweet, citrus-y flavor, stronger and without quite as much liquid as regular orange juice would add.

PhotobucketThe mixture goes into the zip-top bag with the shrimp, and back in the fridge for a day or so.

When it’s time for dinner, Peeps fired up the grill, and we threaded the shrimp onto skewers.

We usually figure about 5 ounces of protein for a serving, so a pound of shrimp is just about right for the two of us – with plenty left over for someone’s lunch the next day.  😀

PhotobucketThe skewered shrimp goes on the grill for just about 1-2 minutes per side – we all know what happens when you overcook shrimp, right?

Think rubber bouncy balls.  😯

So we grill the little guys just until the gray gives way to pink, and there are just barely discernible grill marks on the shrimp.

We like our margarita shrimp with jasmine rice.  And, of course, a garden-fresh salad.  😀


The last thing we do before serving is to squeeze a bit of lime on the shrimp (if you remember), then sprinkle with some coarse salt – kosher salt works nicely for this.

Mmmmm. . . . tequila, lime, and a bit of salt . . . margaritas.

Dude. . . Jimmy Buffet got old, didn’t he?  😯

guess what we are having for linner ( lunch and dinner in one meal )on Sunday? i do a chicken like this, and it is really good.so i bet the shrimp is good

That does sound like it would work just as well. We like fragrant jasmine rice with it – the contrast with the tart limes and the kind of bitter tequila is great!
